100% Saperavi. Vibrant, deep ruby-red colour. Elderberries, blackberries and cherries dominate the nose and are echoed on the palate. A beautifully integrated hint of oak adds appealing structure and balance. Medium-bodied with soft tannins and a pure, lively finish.

An ideal companion to red meat and game, whether pan-fried, grilled or served in a spiced stew. Also excellent with a wide variety of mature cheeses.

climate

Kakheti has a temperate continental climate with warm to hot summers and mild, dry winters, strongly influenced by the nearby Caucasus Mountains. As in Tuscany, days are warm while nights can cool considerably, encouraging slow, even ripening.

soil

Sandy soil rich in clay over a layer of limestone. The vineyards lie at an altitude of 460–510 metres.

vinification

After hand harvesting, the grapes are transferred to stainless steel tanks for fermentation. Carefully controlled punching down and rack-and-return are essential to achieve optimal extraction. Depending on the vintage, the wine undergoes a short ageing period in a selection of different oak barrels. Once the desired style is achieved, it continues ageing in bottle until the cellar master considers it ready.
