100% Rkatsiteli. Pale straw-yellow colour with green reflections. Aromas of white mulberries with subtle tropical fruit notes in the background. A soft, elegant mouthfeel is supported by lively acidity, allowing the fruit to express itself fully. Dry in style, with a light, mineral and balanced finish.
Perfect as an elegant, refreshing aperitif. Delicious with salads, seafood and white meat. Fruit salads and white chocolate also make a surprising yet delightful pairing.
- climate
-
Kakheti has a temperate continental climate with warm to hot summers and mild, dry winters, strongly influenced by the nearby Caucasus Mountains. As in Tuscany, days are warm while nights can cool considerably, encouraging slow, even ripening.
- soil
-
Stony clay soil over a layer of limestone. The vineyards lie at an altitude of 470–490 metres.
- vinification
-
After harvesting, the grapes are gently destemmed and cooled to 5–6°C. Depending on the vintage, they may undergo a short maceration under inert gas to prevent oxidation. The clarified juice is then transferred for fermentation at 14–15°C. The wine ages on its fine lees until the cellar master considers that the desired style has been achieved.
