100% Saperavi. Beautifully deep, intense colour. Aromas of blackberries and black cherries are supported by spicy oak notes and hints of vanilla. The palate echoes these flavours, with blackberries, blackcurrants and cherries. Rich and beautifully structured, with a fine balance between acidity, vinous character and perfectly integrated oak.
Delicious with richly flavoured meat dishes such as beef, game (pan-fried, grilled or stewed) and lamb. It also pairs beautifully with salty, mature cheeses.
- climate
-
Kakheti has a temperate continental climate with warm to hot summers and mild, dry winters, strongly influenced by the nearby Caucasus Mountains. As in Tuscany, days are warm while nights can cool considerably, encouraging slow, even ripening.
- soil
-
Sandy soil with clay over a thick layer of limestone. The vineyards lie at an altitude of 460–510 metres.
- vinification
-
The grapes are carefully selected and harvested by hand. Fermentation takes place in temperature-controlled stainless steel tanks at 25–27°C, with regular punching down and rack-and-return to achieve the desired style. Once fermentation is complete, the wine is clarified and aged in a combination of French and American oak. After the final blend is assembled, the wine is bottled and continues ageing in bottle until the cellar master considers it ready.
