100% Mtsvane. Clear straw-yellow colour with green reflections. The rich bouquet reveals hints of white and yellow plums alongside citrus notes. The palate is dominated by delicate yet intense fruit, supported by lively acidity. An intriguing, vibrant wine with beautiful balance and fully expressed flavours in a fairly long finish.
Excellent as a refreshing, delicately aromatic aperitif. It also pairs beautifully with poultry, fish and a variety of salads.
- climate
-
Kakheti has a temperate continental climate with warm to hot summers and mild, dry winters, strongly influenced by the nearby Caucasus Mountains. As in Tuscany, days are warm while nights can cool considerably, encouraging slow, even ripening.
- soil
-
The vineyards lie at an altitude of 480 to 500 metres. The topsoil consists of clay and stones over a thick layer of soft limestone (carbonate rock).
- vinification
-
The grapes are immediately destemmed and cooled to 5–6°C in stainless steel tanks. They undergo cold maceration under inert gas to prevent oxidation. The clarified juice is then transferred and fermentation begins at a controlled temperature of 14–15°C. The wine continues ageing on its fine lees before bottling.
