Its intense but smooth and easy character makes it ideal with southern, spicy meat stew, lamb, wild boar and deer and also with strong tasting creamy cheeses.
- climate
-
Puglia (Apulia) comes from the Roman A-Pluvia, which means without rain. This already says a lot about the climate. Mediterranean climate with very warm and dry summers and mild winters with limited precipitation.
- soil
-
Typical red, poor soils that contain a lot of iron and are also rich in limestone.
- vinification
-
100% Primitivo. The grapes are picked in the cool of the early morning and gently crushed. The juice undergoes a short maceration and fermentation is started under controlled temperature in stainless steel vats. The wine is then transferred to large, old, wooden barrels and rests for another year before being bottled.
