Ruby red with reddish-brown reflections. The nose is dominated by black fruit, with hints of fresh oak and vanilla. Black cherries and mulberries emerge on the palate. Intense yet soft and supple, with a fruit-driven character leading to a long, flavourful finish of medium intensity.
Perfect with a variety of tapas, such as ham and melon. Its flavourful yet relatively light character also complements pan-fried or grilled meats and spicy stews.
- climate
-
Kakheti has a temperate continental climate with warm to hot summers and mild, dry winters, strongly influenced by the nearby Caucasus Mountains. As in Tuscany, days are warm while nights can cool considerably, encouraging slow, even ripening.
- soil
-
Vineyards at an altitude of 460–520 metres, with good natural drainage. Loam and clay over a thick limestone subsoil.
- vinification
-
100% Saperavi, harvested at optimum ripeness. Modern vinification in stainless steel tanks at a controlled temperature of 22–25°C. Punching down and rack-and-return are essential to achieve optimal extraction from the grape skins. The wine is then filtered and clarified under carefully controlled conditions to achieve the desired style.
