A blend of Georgia’s four major white grape varieties, bringing their distinctive characters together in an impressive expression of their terroir. Straw yellow with golden and green reflections. Citrus and tropical fruit aromas mingle with notes of quince and white mulberries. Rich and intense on the palate, with white plum and wild peach, leading to a crisp, lively finish.
Pair with seafood, saltwater fish, pizza or selected Asian sweet-and-sour dishes. Also delicious as a flavourful, dry aperitif.
- climate
-
Kakheti has a temperate continental climate with warm to hot summers and mild, dry winters, strongly influenced by the nearby Caucasus Mountains. As in Tuscany, days are warm while nights can cool considerably, encouraging slow, even ripening.
- soil
-
Slopes with good natural drainage. Sandy soil rich in clay and limestone.
- vinification
-
Each grape variety is vinified separately using a similar process. After harvesting, the grapes are destemmed and the must is immediately cooled to 5–6°C under inert gas. The clarified juice then ferments in stainless steel tanks at a controlled temperature of 14–15°C. The wine continues ageing on its fine lees before the final blend is assembled and allowed to harmonise. The entire process can take up to nine months.
